BIPPITY BOPPITY

We’re a group of misfits that enjoy making scratch made vegan food with local veggies. We specialize in Italian-inspired (but definitely not traditional Italian) cuisine utilizing the best of seasonal+local and fermentation techniques we’ve learned over the years including koji, miso, shoyu, kombucha, vinegar making, water kefir, vegan cheesemaking, and lactic acid bacteria fermentation.

We utilize locally milled grains to hand make pasta, grow herbs in our garden to lavish plates with, scour the farmer’s market for quality produce, and bake sourdough bread every day in our hearth oven.

We’re food nerds who happen to geek out over local agriculture, culinary history, wine, beer, and hospitality. Come on over and hang out with us!

WHAT WE USE TO COOK WITH

We are not interested in purchasing from mega-corps and utilizing packaged foods. Here’s where we buy our products from:

Farm Direct Produce
We purchase from several farms, including Groundwork Organics, Gathering Together Farm and more. We buy some direct delivered and some we pick up at the Farmer’s Market.

Foraged Goods
We mostly purchase our foraged goods from Matthew Nevitt of Wild Foragers.

Our Grains
We buy a lot of our grains directly from the miller. We love Lonesome Whistle Farm for their Abenaki Corn Polenta and other milled products.

Our Olive Oil
We buy the finest finishing oil and cooking oil from our friends at Oregon Olive Mill in Dayton, OR.

Avocado Oil
We want to make sure to use the healthiest vegan fats we can for our guests, so we always use avocado oil for cooking when we’re not using olive oil.

Salt
For finishing salt, we always use Jacobsen Salt coming from Netarts Bay, Oregon.

Commodity Produce
For year round purchasing of “base produce” like onions, garlic and other things that the smaller producers don’t always provide, we purchase from Organically Grown Company.

Commodity Dry Goods
For some items like salt, spices and numerous sundries, we purchase from Earthly Gourmet and Provvista.
